Summer Series: In The Kitchen with LMDES // Zesty Chicken Tacos and Goat Cheese Salad
For the second installment of our In The Kitchen with LMDES series, we're bringing you something a bit more savory for those summer nights with friends!
When people ask me, “What food from home do you miss the most?” I instantly think of delicious, flavor-filled Tex Mex like tacos, chips and queso or quesadillas. Back home, enjoying tacos is a part of enjoying life, especially during the summer. Getting together with friends and catching up over tacos and margaritas at your favorite Tex Mex spot is typical in the summer, especially on Taco Tuesdays.
The awesome thing about tacos is that they are usually relatively easy to make, and you have full creative freedom on what you want to put in them. You can enjoy a piece of home right here in Spain and invite over your Spanish friends for an afternoon with tacos and margaritas or sangria.

Chicken breast, chopped in pieces
1 clove Garlic, minced
Fresh avocado salsa
1 avocado, chopped
½ cup of red onion, finely chopped
2 Roma tomatoes, chopped
Fresh Lime juice
To start, take your chicken breast, wash it and cut it into small, bite-size pieces that would fit perfectly into the tortilla. For the chicken seasoning, mix together the salt, black pepper, cayenne and tomillo and spread over the pieces making sure the spices are evenly distributed.
Heat up a skillet with olive oil and add the garlic to it until it is medium brown. While on medium heat, add the pieces of chicken into the skillet and let cook until slightly browned. Toss lightly to ensure all sides of the chicken cook.
While the chicken is cooking, begin the salsa. Cut up the tomato, onion and avocado and add them to a bowl. Add fresh squeezed lime juice and salt and black pepper to taste. Top with fresh cilantro and put in the refrigerator to cool.
Goat Cheese Salad
Put greens, goat cheese and pumpkin seeds in a bowl. Add in olive oil, vinaigrette and balsamic glaze and enjoy!
